Grandma's Apple Pie

Method:

Preheat the oven to 175°C. Mix the flour, caster sugar, vanilla sugar, cold butter, 2/3 of the beaten egg and the salt, and knead into a smooth dough. Set aside 1/4 of the dough for the top. Grease a 24 cm springform pan and line it completely with the dough, making 3 cm high sides. Press firmly. Prick the base with a fork and sprinkle a thin layer of breadcrumbs over it. Mix the apple pieces, rum essence, raisins, sugar and cinnamon well and spoon the filling into the pan. Roll the remaining dough 1/2 cm thick and cut into 1 cm wide strips. Lay them over the filling in a lattice and press them onto the edges. Brush the top with the rest of the egg. Bake for 1 hour 15 minutes until golden brown. Let cool in the pan before removing the ring.
